Shirataki Noodles with Chicken, Feta & Tomato

Here’s a simple and flavorful recipe for Shirataki Noodles with Chicken, Feta & Tomato:

Ingredients:

  • 1 package of shirataki noodles (about 200g)
  • 1 boneless, skinless chicken breast, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions:

  1. Prepare the Shirataki Noodles:
    • Rinse the shirataki noodles under cold water and drain well.
    • Heat a non-stick pan over medium heat and add the noodles. Dry-fry them for a few minutes to remove excess moisture. Set aside.
  2. Cook the Chicken:
    • Season the chicken slices with salt and pepper.
    • In the same pan, add olive oil and minced garlic. Sauté until fragrant.
    • Add the chicken slices and cook until browned and cooked through. Remove from the pan and set aside.
  3. Make the Tomato Sauce:
    • In the same pan, add the halved cherry tomatoes. Cook for a few minutes until they start to soften.
    • Season with salt and pepper.
    • Add the cooked chicken back to the pan and toss everything together.
  4. Assemble the Dish:
    • Add the drained shirataki noodles to the pan with the chicken and tomatoes. Toss to combine.
    • Sprinkle the crumbled feta cheese over the top.
    • Garnish with fresh basil leaves.
  5. Serve:
