Peanut Butter Oatmeal Protein Cookies

Here’s a recipe for Peanut Butter Oatmeal Protein Cookies that are both healthy and delicious:

Ingredients:

  • Bananas: Use very ripe bananas for sweetness.
  • Oats: Choose old-fashioned oats or quick oats.
  • Nut Butter: I recommend peanut butter, but you can also use almond butter or seed butter if you have nut allergies.
  • Vanilla Protein Powder: 1 scoop of your favorite vanilla protein powder.
  • Egg: One large egg adds protein.
  • Salt: A pinch of kosher salt.
  • Flavor: Cinnamon and vanilla make these breakfast cookies smell and taste amazing.
  • Chocolate Chips: I use sugar-free chocolate chips, but regular semi-sweet chips work too.

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the dry ingredients: oats, protein powder, baking powder, baking soda, and salt. Set the mixture aside.
  3. In another bowl, combine the honey and egg, and whisk vigorously until well blended.
  4. Add the peanut butter and vanilla extract to the bowl with the honey and egg mixture.
  5. Mash the ripe bananas and add them to the wet ingredients.
  6. Mix the wet and dry ingredients together until well combined.
  7. Fold in the chocolate chips.
  8. Drop spoonfuls of the cookie dough onto a parchment-lined baking sheet.
  9. Flatten each cookie slightly with the back of a spoon.
  10. Bake for 15-20 minutes, or until the cookies are golden brown and set.
  11. Let them cool on a wire rack before enjoying!

These Peanut Butter Oatmeal Protein Cookies are perfect for breakfast on the run or as a healthy mid-afternoon snack. They’re packed with protein, fiber, and natural sweetness from the bananas. Enjoy!
