Mediterranean Quinoa Bowl with Roasted Vegetables

This Mediterranean-inspired quinoa bowl is a delightful combination of flavors and textures. It’s a wholesome and satisfying meal that’s perfect for lunch or dinner. Let’s get started!

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 medium sweet potato, peeled and cubed
  • 1 small head of broccoli, cut into florets
  • 1 cup cauliflower florets
  • 1 cup Brussels sprouts, halved
  • 1 red onion, sliced
  • 2 cups kale, chopped
  • Olive oil
  • Salt and black pepper, to taste
  • Lemon tahini dressing (recipe below)

Instructions:

  1. Roast the Vegetables:
    • Preheat your oven to 375°F (190°C).
    • Toss the sweet potato, broccoli, cauliflower, Brussels sprouts, and red onion with olive oil, salt, and black pepper.
    • Spread the vegetables on a baking sheet and roast for 40-45 minutes, or until they are tender and slightly crispy. Feel free to adjust the roasting time to your preference.
    • While the vegetables are roasting, prepare the quinoa.
  2. Cook the Quinoa:
    • Rinse the quinoa under cold water.
    • In a saucepan, combine the quinoa with 2 cups of water.
    • Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed.
    • Remove from heat and let the quinoa steam with the lid on for an additional 5 minutes.
  3. Assemble the Bowls:
    • In individual serving bowls, layer the cooked quinoa, roasted vegetables, and chopped kale.
    • Drizzle with the lemon tahini dressing (recipe below).
    • Optional: Add protein of your choice (chicken, fish, beans, steak, or cottage cheese).
  4. Lemon Tahini Dressing:
    • In a small bowl, whisk together:
      • 2 tablespoons tahini
      • Juice of 1 lemon
      • 1 clove garlic, minced
      • Salt and pepper, to taste
      • Water (as needed to achieve desired consistency)
  5. Serve and Enjoy!
    • These quinoa bowls are great for meal prep. Divide individual portions into containers, keeping the dressing separate until you’re ready to eat.
    • Reheat the roasted vegetables and quinoa as needed.
