Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 medium sweet potato, peeled and cubed
- 1 small head of broccoli, cut into florets
- 1 cup cauliflower florets
- 1 cup Brussels sprouts, halved
- 1 red onion, sliced
- 2 cups kale, chopped
- Olive oil
- Salt and black pepper, to taste
- Lemon tahini dressing (recipe below)
Instructions:
- Roast the Vegetables:
- Preheat your oven to 375°F (190°C).
- Toss the sweet potato, broccoli, cauliflower, Brussels sprouts, and red onion with olive oil, salt, and black pepper.
- Spread the vegetables on a baking sheet and roast for 40-45 minutes, or until they are tender and slightly crispy. Feel free to adjust the roasting time to your preference.
