Ingredients:

  • 1 lb ground turkey
  • 1/2 cup quick oats (or breadcrumbs)
  • 1 large egg
  • 1 cup corn kernels (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 can (4 oz) diced green chiles, drained
  • 1/2 cup enchilada sauce (store-bought or homemade)
  • 1 jalapeño pepper, thinly sliced (optional, for extra heat)
  • 1 cup shredded cheddar-jack cheese

Instructions:

  1. Preheat your oven to 350°F (175°C).
